Kale and Quinoa Salad

Kale and Quinoa Salad

Preparation: 10 minutes, Cooking: 20 minutes, Total: 30 minutes

Serves 4

Ingredients

  • 130g white quinoa, rinsed well
  • 1 tsp salt
  • 400g kale leaves, stems removed and finely sliced
  • 1 Tbs olive oil
  • 1 Tbs balsamic glaze concentrate
  • 1 clove garlic, crushed
  • 50g blanched almonds

Dressing

  • Zest and juice of ½ lemon
  • 1 Tbs olive oil
  • 2 Tbs fresh mint leaves, roughly torn
  • Salt and pepper to taste

Directions

  1. Place the quinoa into a pot with 200ml cold water. Add a teaspoon salt and bring to the boil.
  2. Reduce the heat to simmer and cook for about 15 minutes until the water is absorbed and the quinoa is tender. Drain any excess liquid, fluff up the quinoa and keep warm.
  3. Toast the almonds in a dry pan until golden in colour and slightly fragrant. Remove from pan and chop roughly.
  4. Heat the olive oil in a non-stick frying pan over medium heat, add the kale, garlic and stir through for about 3 minutes to wilt slightly.
  5. Fold in the quinoa, drizzle the balsamic concentrate and toss to combine. Remove from heat.
  6. Mix the dressing ingredients and fold through the salad.
  7. Sprinkle over the toasted almonds and serve.
