INGREDIENTS
- 500g mince – beef, lamb or soya mince
- 1 onion, finely chopped
- 1 clove garlic, crushed
- 1 green chilli, chopped
- 2ml ground cinnamon
- 200g tomato puree or any yummy pasta sauce
- 125ml stock
- Salt and ground pepper to taste
- Santa anna corn chips
TOPPINGS
- 3 Avocados
- Grated cheddar cheese for sprinkling
- Chunky creamy cottage cheese
- Chopped fresh tomato
- Fresh Coriander
METHOD
In a little heated oil sauté onions, garlic and chilli.
Get the kids to rinse the mince through a colander for you. Add the mince and fry slightly.
Reduce the heat – reminding kids to always be careful at the stove.
Add all the seasoning and mix well.
Add tomato puree or pasta sauce and stock.
Add salt and pepper and simmer until the mixture has thickened and is no longer watery.
Whilst this is simmering get the kids to mash up the avo’s in a bowl and season with salt, pepper and a squeeze of lemon juice.
They can also place the santa anna corn chips into a big tray for you – get them to count out 20 or so.
Once mince is cooled – dish over the corn chips, top with avocado, cream cheese and sprinkle over
any other additional toppings you want to add – and there you have it, all dig in. Serve with a side salad.
