Ingredients
- 1 medium carrot, peeled and grated
- 1kg large courgettes/marrows, grated and excess moisture squeezed out
- 1 large onion, finely chopped
- 2 cloves garlic, crushed
- 35g/1 cup fresh mint leaves, chopped
- 150g feta, crumbled
- 100g parmesan, pecorino, or other sharp, dry cheese
- 75g cheddar cheese
- 125g/1 cup self-raising flour
- 4 eggs, lightly beaten
- 250ml milk
- 80ml olive oil
- Pepper to taste
- Green salad to serve
Directions
- Preheat the oven to 180*C.
- In a large bowl mix together the carrot, courgettes, onion, garlic, mint and cheeses.
- Add the flour and mix well.
- Add the eggs slowly and mix well, avoiding creating lumps.
- Add the milk and olive oil and mix well to combine all the ingredients.
- Season with pepper.
- Pour the mixture into a lined/buttered baking dish and bake for about 1 hour or until set.
- Allow to cool for 10-15 minutes before serving.
- Serve with a fresh green salad.
