Courgette Tart

Preparation: 15 minutes, Cooking: 1 hour, Total: 1 hour 15 minutes

Serves 4

Ingredients

  • 1 medium carrot, peeled and grated
  • 1kg large courgettes/marrows, grated and excess moisture squeezed out
  • 1 large onion, finely chopped
  • 2 cloves garlic, crushed
  • 35g/1 cup fresh mint leaves, chopped
  • 150g feta, crumbled
  • 100g parmesan, pecorino, or other sharp, dry cheese
  • 75g cheddar cheese
  • 125g/1 cup self-raising flour
  • 4 eggs, lightly beaten
  • 250ml milk
  • 80ml olive oil
  • Pepper to taste
  • Green salad to serve

Directions

  1. Preheat the oven to 180*C.
  2. In a large bowl mix together the carrot, courgettes, onion, garlic, mint and cheeses.
  3. Add the flour and mix well.
  4. Add the eggs slowly and mix well, avoiding creating lumps.
  5. Add the milk and olive oil and mix well to combine all the ingredients.
  6. Season with pepper.
  7. Pour the mixture into a lined/buttered baking dish and bake for about 1 hour or until set.
  8. Allow to cool for 10-15 minutes before serving.
  9. Serve with a fresh green salad.

  • Courgettes, also known as marrows, patty pans, zucchini or summer squash is rich in fibre and low in calories. It contains the vitamins A (beta-carotene), B6, C, E and K and rich in minerals such as calcium, carotenoids, folate, niacin, potassium, and zinc among many others.  The fibre helps keep the cancer-causing toxins away from the cells of the colon. The beta-carotene and vitamin C are anti-inflammatories, and along with folate protect the cells of the colon from the chemicals which can lead to colon cancer.
