Dairy-free Ice Cream

Vegan ice cream is growing in popularity, especially coconut cream based ice cream. I myself, am not a fan of coconut milk and cream as it tends to upset my stomach. I’ve been searching recipes for almond milk ice cream and finally found a combination that made the most beautiful creamy ice cream. You can also make it without a churner!

Ingredients:

Method:

  • If you don’t have a churner then you can use a high speed blender.
  • Whisk together all ingredients and add to blender
  • Pour ingredient mix into ice cube trays and freeze
  • Then blend the frozen cubes until smooth
  • Freeze for another hour
  • Because there are no preservatives added, it’s best to eat the ice cream on the day its made
  • You can however keep it for up to a month and thaw before eating.

Different Flavours:

Mint Choc Chip:

Chocolate:

  • 1/4 cup cacao or cocoa powder
  • Add in some choc chips after churning

Choc-nut:

Peanut butter:

Coffee: 

  • Add 2 tsp coffee or more for stronger taste

Strawberry:

  • Use only 1 1/2 cups almond milk instead of 2 cups
  • Add in 1/2 cup mashed strawberries
  • Use coconut butter instead of almond butter
  • Stir in 1/2 cup diced strawberries
  • Top with some crystalized diced strawberries!
