Makes enough for 10 side portions, perfect served with fatty lamb chops

Ingredients
750g fine green beans, topped and tailed
75g butter
A few drops of olive oil
1 tsp fresh chopped thyme
1 large lemon pealed
Salt and extra pepper for a bite
1 packet baby spinach
1 tbsp toasted sesame seeds
1 bunch chopped chives
½ cup brunoise tomatoes

 

Directions
1. Toss the green beans into boiling salted water and boil until they have just lost their crunch (about 5 minutes), and then plunge them in ice cold water to keep them green.
2. In a pot, over medium heat, melt the olive oil, thyme and butter.
3. As that melts, chop up the lemon and toss in the butter, with the leftover juices.
4. Toss in the green beans and baby spinach and warm through.
5. Garnish with the spring onions, tomato and sesame seeds and add loads of black pepper to balance the lemon flavour.
6. Serve warm.
