Lentil Soup

INGREDIENTS

  • 750ml Dr Broth Beef Bone Broth
  • 1 cup lentils
  • Extra virgin olive oil
  • 3 cloves garlic – chopped
  • 2 medium onions – chopped
  • 2 medium carrots – chopped
  • 2 plum tomatoes – chopped
  • 2 ribs celery – chopped
  • Sprig of Rosemary and Thyme – leaves chopped
  • Salt & pepper
  • lemon juice
  • plain Greek yoghurt, chopped chives & cayenne pepper (to serve)

METHOD

In a saucepan large enough to fit the lentils and bone broth, gently simmer together, until the lentils are soft. Most but not all of the bone broth will evaporate but not all.
+/- 30 min cooking time

In a separate saucepan, warm 1 tbls of olive oil at a medium heat add the garlic. When golden brown add herbs & vegetables & sweat for about 5 – 6 minutes.

Add the lentil & broth mixture & stir through. Cook until the consistency is like a thick stew. Then check your seasoning, add salt, pepper & lemon juice to taste.

Serve with a dollop of Greek yoghurt, a sprinkle of cayenne pepper and chopped chives.
