Gluten free bread dessert
Ingredients
- 400g frozen mixed berries
- One tablespoon corn flour
- Thin slices of gluten free bread to line the base of a pie/flan dish
- 60ml/3 tablespoons warmed honey
- One jar of almond or cashew nut spread
- 100g dark dairy-free chocolate
- 200ml warmed and honey-sweetened almond milk
Directions
- Coulis
- Warm the berries in a pan till slightly broken down
- Mix the corn flour with enough cold water to make a runny paste
- Stir the corn flour paste through the berry mix and set aside, allow to cool
- Line a shallow pie dish with a layer of gluten free bread
- Lightly brush with warm honey
- Evenly spread a thick layer of nut butter over the honey-soaked bread
- Grate a thick layer of dairy-free chocolate over nut butter
- Pour the berry mix over the chocolate
- Refrigerate, minimum 3 hours or overnight
- Serve with warmed and honey-sweetened almond milk
