This is for a 5-6kg turkey

Basting glaze Ingredients
100g butter or duck fat
5 tbsp maple syrup
Pork fat or skin, enough to cover the breasts

Directions
1. Preheat oven to 220ºC
2. Melt the butter and syrup together gently, and then whisk until fully blended.
3. Brush the bird with the baste and keep basting throughout.
4. Place the pork fat over the breasts. I use the skin I cut off my Christmas ham.
5. After roasting the turkey for half an hour, turn the heat down to 180ºC and continue roasting for 1 hour 30 minutes.
6. Then remove the pork fat/skin and glaze, before cooking it for final 20 minutes at 220ºC to brown the skin of the breasts.
7. Let it rest covered in tin foil for at least twenty minutes before serving, or carving.
