Thrive Sweet and Sour Stir-fried Vegetables

STIR-FRIED SWEET AND SOUR VEGETABLES

Serves 4

INGREDIENTS

1Tbs coconut oil

900g (approximately) pre-packed traditional stir-fry vegetables

100g baby corn halved or roughly chopped

100g sliced button mushrooms

100ml sweet and sour sauce

Salt and pepper

DIRECTIONS

  1. Heat a wok to medium-high heat
  2. Add the oil, vegetables and corn and stir-fry until tender (about 2 minutes)
  3. Add the mushrooms and the sauce and stir-fry until hot
  4. Season with salt and pepper as desired
