[vc_row][vc_column][vc_column_text][mark style=”paragraph” color=””]This salad is so refreshing in the summer heat. If not yet, it will be a summer staple![/mark]

Serves 6 as an accompanying dish.

INGREDIENTS

  • 1 – 1.5kg watermelon, peeled and cubed into 2cm pieces.
  • ½ small red onion, thinly sliced.
  • 100g feta, preferably the crumbly variety.
  • ½ cup loosely packed mint leaves, roughly chopped.

Dressing

  • 3 tablespoons extra virgin olive oil.
  • 1 tablespoon lemon juice.
  • Salt and pepper to taste.

DIRECTIONS

  • Place the cubed watermelon in a large bowl.
  • Add the onion.
  • Crumble the feta over the watermelon.
  • Sprinkle the mint leaves.
  • Add the dressing.
  • Toss to combine.
  • Add extra salt and pepper if required.
  • Transfer to a platter and spread out in a single layer, and serve.

NOTE

Finely grated zest of one lemon, sprinkled over the salad will add another delicious extra level of flavour.[/vc_column_text][/vc_column][/vc_row]
